Brewing hefe....

Brewing the Hefe was a little challenging.  So many complex flavors packed into this simple beer.  The schedule is a little intense. I was very satisfied with the smell of the bittering hops there are no aroma hops. You have to pay very close attention to temps so you don't tan the grains, or scorch the malt.  I think I should have used a activator yeast instead of a dry yeast.  I've been researching yeast.  Wow a hole lot of info.

I've checked on it several times to day.  Its bubbling beautifully.  I am looking forward to putting in the second vessel to oak it to get some of the traditional flavors.  I hope this brew meets my expectations.  It will be about 4 to 6 weeks for aging, and oaking.  Then another two weeks to prime in the bottles.  I think I will be pleased.
